Happy Fall :: Crumb Topped Pumpkin Bread


Ingredients for Loaf:

1 1/2 cups all purpose flour (I like to use 1/2 whole wheat, 1/2 all purpose)
2 t baking powder
1 t pumpkin pie spice
1/2 t salt
1 egg
1/3 c raw sugar
1 c canned pumpkin
1/4 c olive oil
1 t vanilla
1/2 c walnuts, coarsely chopped

Ingredients for topping:
1/4 c (1/2 stick) real butter, unsalted & softened
1/4 packed dark brown sugar
1/2 c all purpose flour
1/3 c walnuts, finely chopped
1 T agave nectar


1. Heat oven to 35o degrees. Coat a 9 x 5 x 3 inch loaf pan with non-stick cooking spray.
2. Mix flour, baking powder, pie spice and salt in a small bowl. Beat the egg and sugar in large bowl. Beat in the pumpkin, oil, vanilla until smooth. Make a well in the center of the flour mixture. Add egg mixture and stir just until moistened and batter comes together. Fold in the walnuts. Smooth the batter into prepared pan.
3. Make topping by mixing butter, brown sugar and flour in small bowl until crumbly. Stir in agave and stir in walnuts. Sprinkle over batter.
4. Bake loaf at 350 for 50 to 55 minutes, until wooden toothpick tests clean. Cool in pan on rack 10 minutes. Turn out onto rack to cool completely.
