I love going to the farmer's market, but the one near my house only happens on Thursday. It's my favorite afternoon because the house is chock full of fresh produce, and I always make a huge salad with whatever I have on hand. This week, it included greens, strawberries, avocado, dill, kale, and walnuts. For a simple dressing, I drizzled the whole salad with lemon juice, olive oil, and agave. YUM!
What is your favorite fresh salad concoction?

That is so weird I made almost that EXACT salad for dinner last night. Saturday at the FM I picked up some sweet baby tomatoes and berries, so my Sunday night salad consisted of baby greens (including spinach), tomatoes, raspberries, blueberries, avocado, and walnuts. I threw together a quick berry balsamic vinaigrette, and we served it with grilled chicken breast on top, and brown rice on the side.
ReplyDeleteSince I love doing salads as the focus of a meal during the summer, and there are so many great possibilities, I was even thinking of doing a weekly summer salad feature on my blog.
crumbled goat cheese, dried cranberries, and slivered almonds with huckleberry dressing. Yum!!
