Easy Pumpkin Chocolate Chip Muffins


Today's recipe is from a Mama Manifesto reader, Jenn.  She is "Mama" to two kids - 6 year old Benjamin, and 3 year old Lauren.  We love this recipe, and thought it was the perfect recipe to share the week of Thanksgiving!  

My Kid's Favorite Pumpkin Chocolate Chip Muffins

Estimated time- 20 minutes Prep, 20 minutes cooking

Ingredients
2 1/2 cups whole wheat pastry flour
1/2 cup ground flax seed (I buy Bob's Red Mill brand for both my flour and ground flax- tidbit about ground flax seed is that you can use it as a 3 to 1 ratio in the place of oil, I used to do that in this recipe but then started using applesauce in the place of the oil. All of the flax seed made my kids poop like crazy!)
2 tsp baking soda
2 tsp baking powder
2 tsp ground cinamon or pumpkin pie spice
1/2 tsp salt
4 large eggs, slightly beaten
1 cup raw turbinado sugar (Ali substitutes 1/4 cup agave nectar + 1/4 cup raw sugar)
1 can (15 oz) Pure Pumpkin
1 cup applesauce (in place of oil, I use natural but it probably doesn't matter)
1 tsp vanilla
1-2 cups semi-sweet chocolate chips (or carob chips or whatever)

Directions:
Preheat oven to 350. Grease muffin cups or line with paper bake cups

Combine flour, baking soda, baking powder, cinnamon and salt in medium bowl. Combine eggs and sugar in large mixing bowl. Add pumpkin, vanilla and applesauce, mix well. Stir in flour mixture until moistened. Stir in chocolate chips. Spoon batter into prepared muffin cups.

Bake for 18-23 minutes or until top springs back when lightly touched.  

Jenn says:  "Yummy recipe - the only naughty thing is the chocolate chips but there is so much whole wheat goodness, plus pumpkin (a vegetable I would not get them to eat otherwise) that I figure it is a small trade off. I freeze half the muffins, Benjamin would eat these everyday for breakfast and he is not a breakfast kid so this is the perfect way to send him off to school with something in his tummy."

  1. Hey here's a SUPER easy, tasted/tested & loved recipe from Weight Watchers.
    Chocolate Pumpkin Cake
    1 boxed choc cake mix (does that throw healthy out the window?)
    1 can pumpkin
    1/2 c water

    Mix & bake until knife comes out clean - 45-55 min roughly

    As it cools, it almost forms it's own frosting - no need to frost this high fiber scrumptious treat. I don't even tell folks what's in it until after their 2nd piece. YUM!
