Balsamic Chicken in the Crock Pot

I often make this at the start of the week to serve over warm rice, and then use the leftover chicken in salads, wraps, and other dishes through out the week. This is the perfect dish to prep while you make lunch, and it will be ready for you at dinnertime!


  • 4-6 chicken breasts
  • 1 bottle of balsamic vinagrette dressing (We like Trader Joe's or Newman's Own)
  • Sprinkling of a little salt and pepper
  • Sprinkling of favorite dried herbs... I like the Herbs of Provence mix

Add the above ingredients to a crock pot and cook on low for 6 hours, or high for 4.
