This has become one of my favorite recipes. Amy introduced me to the Cous-Cous Salad in the prepared foods section of the Whole Foods store. It is so tasty that I had to learn how to make it! I tweaked the recipe every time I made it and finally landed on this one. It is a really great side dish with a green salad and any sort of grilled item! It is fabulous served cold. Everytime I make it for a crowd, it gets rave reviews! Enjoy...
Ingredients:
-Whole-wheat cous-cous prepared the way you like it.
(I use chicken broth in mine to give it a bit more flavor)
-1 red onion, finely diced
-1 sweet bell pepper, finely diced (red, orange or yellow)
-1 tomatoe or a pint of grape tomatoes, diced
-1 container crumbled feta cheese (6 - 8 oz.)
-a few tablespoons of lemon juice (or more to taste)
-a few tablespoons of olive oil
-ground pepper to taste
-I sometimes will add just a splash of balsamic vinegar, but this is optional
-throw in a bit of parsley, and if you have any fresh herbs on hand, toss them in too (finely chopped)
1. Prepare your cous-cous.
2. Chop all the veggies.
3. Mix all the ingredients up together and chill for a bit before serving.
I seriously want to stick my face in that bowl. Right now.

ReplyDeleteI am glad you like it! My kids are on the fence about it, but Drew and I nearly eat our weight in cous cous every time I make it. :)
