Lazy Mama's Easy Artichoke

I like a salty snack in the evening hours, while I read classic literature watch So You Think You Can Dance. Unfortunately, most salty snacks come with a few extras I don't need: calories, transfats, and unrefined flour. Enter the artichoke - which always seemed like a daunting treat to make. However, I have found that if I prepare this while I'm making dinner and pop it in the crockpot around 5pm, I have a perfect artichoke waiting for me when I ready to assume the recline position once the kids are asleep. And best yet: a large artichoke has approximately 80 calories!


1 large artichoke, tough leaves removed

1/2 cup lemon juice

1 diced shallot (or sub celery)

1 garlic clove

1 tbsp salt

Cut the stalk off the artichoke and place in the bottom of a small crockpot, topside up. Add other ingredients, then fill the crockpot with water to the top. Place lid on and set on high for 4-5 hours.
