"What's In the Fridge?" Pasta Sauce

I am learning the art of throwing caution to the wind and cooking without a recipe. Today, I found myself doing the five o'clock scramble. You know . . . when it's five o'clock and you realize you have no plans for dinner? I opened the fridge and found some chopped onions from making the Oprah Burger, some crushed tomatoes from making African Chicken Stew, a half-empty jar of crushed garlic, and about a cup of fresh spinach ready to go bad. I threw them together and made a pasta sauce and it turned out great! I must share.


1 tbsp olive oil
1 cup chopped onion
1/2 cup chopped garlic
2 cups crushed tomatoes
1 cup fresh spinach (steamed)

I sauteed the onions and garlic until brown, and then added the spinach and tomatoes just to heat them up. Then I poured it all into a blender and pulsed until it was the consistency of bruschetta. We served it on flax seed pasta from Trader Joes's. YUM!
