Broccoli Mac

Macaroni and Cheese seems to be one of those staple foods for kids. And for my uber-picky daughter, it's one of about 10 food items that she will eat right now. So I've been trying to find ways to make this meal a little healthier.

My favorite version is Aunt Annie's organic whole wheat shells. Not only is it made of wholesome organic grain, but it's actually really, really tastey. We have been slowly adding broccoli to the recipe, and my kids have not missed a beat. I chop the broccoli up very finely, and then add it to the water before it starts to boil. It cooks along with the pasta, and gets very tender. The texture is soft that it blends well with the pasta, and the pieces are too small for my kids to pick out. The result? My kids just got a serving of broccoli with their macaroni, and didn't even complain!


  1. I cannot wait to try this. I am going to have to come up with some sort of twisted title, though. I know the first thing Logan will say is, "I don't like green mac." Maybe I can call it, "Turns Pink in Your Tummy Mac". :)

  2. You are a genius! I always add things to the mac n cheese and they just pick them out. I will definitely have to try this one.
