Fresh Avocado and Corn Salsa

4 ears of fresh corn on the cob (do not cook the corn!)
½ small red onion, diced
1 c. of salsa of choice (I like the smoky peach from Trader Joe' lends a nice sweet flavor)
3 avocados, diced OR 12 oz. of guacamole
juice of 1 lemon or lime
fresh pepper and salt

1 bunch of cilantro, chopped finely

1. slice the corn off the cob
2. combine all the ingredients and mix well

Serve as dip w/ tortilla chips, or as a condiment on burgers.
I like to make chicken or turkey burgers, and serve on top of a bed of spinach w/ sliced tomatoes & red onion. Put a few tablespoons of the salsa on top of “salad” and then place burgers on top.

*It would also be divine with grilled chicken or steak!

*Shortcut tip is to use pre-prepared guacamole and just combine all the other ingredients.
