African Chicken Stew

I made this tonight for my book club, because we were reading a book about africa this month. It was so yummy! And actually fairly easy, once you get all the ingedrients into the crock pot. It's full of healthy ingredients and I think it may be a new staple at my house. We served it over jasmine rice.

1 lb. boneless skinless chicken, cut into bite sized pieces
1/2 tsp. ground ginger
1 tsp. paprika
1/2 tsp. cinnamon
2 tbsp. dried parsley
2 tb. olive oil
16 oz. can diced tomatoes
1 onion, chopped
2 cloves garlic, minced
3 c. chicken stock
1/4 c. natural peanut butter
2 yams, peeled and cut into chunks
2 tb. red wine vinegar

Sautee vegetables and spices in the oil until vegetables are tender and the smell of the spices makes your tummy rumble. Add chicken, cook until golden brown. Add to crock pot. Add chicken stock, tomatoes and Peanut Butter. Cook 4-5 hours on high or 6-7 hours on low.


  1. I am definitely making this next week, and I have to know, what is the green leafy-looking stuff in the picture? I don't see anything in the ingredient list that looks like it could be that.
