Roasted Vegetables on the Side

If you are looking for a great veggie side dish, this is one that works well with grilled meat or fish, or any sort of casserole. And, it is very easy...

*Shortcut tip: use left over veggies in a healthy egg white omelette the next day!


Just about any vegetables you like, or any combo of veggies that you like
I like to use broccoli, mini sweet bell peppers, small carrots (pre cut and peeled are the most simple), asparagus 

a drizzle of olive oil (i am not sure how much because it depends on the amount of veggies, but lets just say "a healthy drizzle") :)
ground pepper or ground lemon pepper & Kosher sea salt

1. Wash and prep your veggies
2. Spread the veggies out on a cookie sheet (if you line the cookie sheet with aluminum foil first, it makes for easier clean up)
3. Drizzle with olive oil
4. Sprinkle with pepper and kosher salt
5. Bake at 400 degrees for 20 - 25 minutes, or until veggies start to get a little toasty looking
6. Turn off oven, sprinkle veggies with freshly grated parmesan cheese and then place back in the oven until cheese melts
